Sassy Black Beans and Corn

Ingredients
- 16 oz Frozen corn
- 6 Tri Colored Peppers
- 1/3 cup small diced Red onion
- Olive oil
- Sassy bbq rub
- Chupacabra special blend (or a cajun season, not a blackened seasoning)
- Mild vinegar to taste
- Salt
Directions
- Heat oven to 400 roast peppers drizzled with olive oil 15 to 20 minutes turning once.
- Place Peppers in bowl and cover with Saran wrap and let sit till cool.
- Pull skin off and dice peppers.
- On the same pan place frozen corn drizzle olive oil and season equally with Sassy and Special Blend.
- Place in oven stirring twice cooked for 30 minutes and remove.
- While corn is cooking dice red onion add to corn when finished and hot. (It will help soften the onion.)
- Add diced peppers add 1 tablespoons of vinegar and 1 tablespoons olive oil salt and pour over mixture and stir. Taste add more vinegar if needed.
- TIP: This can be served hot as a side, or as a topping for nachos or tacos.
