Sassy Black Beans and Corn

Ingredients

  • 16 oz Frozen corn
  • 6 Tri Colored Peppers
  • 1/3 cup small diced Red onion
  • Olive oil
  • Sassy bbq rub
  • Chupacabra special blend (or a cajun season, not a blackened seasoning)
  • Mild vinegar to taste
  • Salt

Directions

  1. Heat oven to 400 roast peppers drizzled with olive oil 15 to 20 minutes turning once.
  2. Place Peppers in bowl and cover with Saran wrap and let sit till cool.
  3. Pull skin off and dice peppers.
  4. On the same pan place frozen corn drizzle olive oil and season equally with Sassy and Special Blend.
  5. Place in oven stirring twice cooked for 30 minutes and remove. 
  6. While corn is cooking dice red onion add to corn when finished and hot. (It will help soften the onion.)
  7. Add diced peppers add 1 tablespoons of vinegar and 1 tablespoons olive oil salt and pour over mixture and stir. Taste add more vinegar if needed.
  8. TIP: This can be served hot as a side, or as a topping for nachos or tacos.
