Get ready for a sweet, smoky, melt-in-your-mouth bite with these Sassy Candied Pork Belly Cubes! Slow-smoked, glazed with a bold BBQ sauce and red soda mixture, then caramelized to perfection with a sweet Sassy sugar finish. Grab a toothpick and get ready to be wowed!

Ingredients

  • Skin off pork belly slab 

  • Sassy BBQ rub

  • Orange juice

  • Big Red soda, Cheerwine or Strawberry soda (red soda)

  • Your favorite bbq sauce (I use Head country spicy)

  • Raw sugar

  • Kosher salt

Directions

  1. Take pork belly and cut it into 2 inch strips.

  2. Coat each side of the belly in Sassy bbq rub. Let sit over night or minimum of 2 hours prior to grilling.

  3. Meanwhile mix 1 cup of bbq sauce with 1/4 cup soda and 1/4 orange juice.

  4. Smoke belly fat side up low n slow at 225 for 2 hours. Remove and cut each piece down from 2 inch to one inch then cube in 1 x 1 inch bites.

  5. Place back on grill on a foil sheet. Smoke an additional hour.

  6. After the 3rd hour, every 20 minutes take bbq sauce mixture and brush or squirt of belly. And keep cooking.

  7. After 4 hours total cooking time @225, crank up fire to 300 to carmelize bites. Cook about 15 to 30 minutes. Pull from pit.

  8. Take 2 tablespoons of Sassy and 3 tablespoons of raw sugar, 1/2 teaspoon kosher salt, combine and Sprinkle over cooked bites.

  9. Serve with a toothpick and be prepared to be wowed!

  10. TIP: Pork belly will have different types of fat, hard, soft and what I called kernels. They will cook differently. Soft fat might be ready sooner.
