Summer Sassy Grilled Squash Casserole
Fresh summer squash, sweet onions, juicy tomatoes, and a touch of Sassy BBQ Rub come together in this simple grilled casserole that's bursting with flavor. It's the perfect backyard side dish, with smoky, cheesy goodness in every bite that pairs beautifully with anything hot off the grill.

Ingredients
- 1 zucchini
- 1 yellow squash
- 1 calabacita squash
- 1 quarter of both red and sweet onion
- 1 large beefsteak or heirloom tomatoes
- 2 tablespoons of unsalted Butter
- 1 teaspoon of Sassy bbq rub
- Olive oil
- 1/4 cup shredded Italian cheese
- Drizzle of water
Directions
- Take all of the squash and slice them 3/8" thick disks (see tip) brush each side with olive oil.
- TIP: After slicing squash and zucchini allow them to sit on a paper towel for 30 minutes before season and cooking.
- Gently seer both sides till slightly browned. Arrange squash in 8 x 8 pan.
- Slice the onions and place on top of squash.
- Take the 2 tablespoons of butter and place across the top.
- Season with the Sassy bbq rub.
- Slice the tomatoe into equal slices to cover the entire dish, sprinkle with cheese and drizzle with water.
- Cover with foil place on grill 30 minutes remove foil continue to cook an additional 15 minutes.
- Total cook time 45 minutes at 350 degrees
