Garlic Butter Shrimp with Beer and Old Bay

Ingredients
- 1.5 pounds large shell-on shrimp, deveined but tails intact
- 6 tablespoons unsalted butter
- 4-6 cloves garlic, minced
- 1-2 teaspoons hot sauce, (like Tabasco, adjust for heat)
- 6 ounces light lager beer
- 1 teaspoon Old Bay seasoning
- Salt, to taste
- Black pepper, to taste
- 1 medium lemon, juiced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil, (optional, for searing)
Directions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. If not using olive oil, simply melt 3 tablespoons of butter in the skillet.
- Add the shell-on shrimp in a single layer. Season with salt and black pepper. Sear the shrimp for about 2-3 minutes on each side, until they turn pink and opaque, and slightly charred. Remove the shrimp from the skillet and set aside.
- In the same skillet, reduce the heat to medium. Add the remaining 3 tablespoons of butter and minced garlic. Sauté the garlic until fragrant, about 30 seconds, being careful not to burn it.
- Pour in the beer and stir well, scraping up any browned bits from the bottom of the skillet. Allow the mixture to simmer for about 2-3 minutes, letting the alcohol cook off and flavors meld.
- Stir in the hot sauce and Old Bay seasoning (or smoked paprika), then return the seared shrimp to the skillet. Toss to coat the shrimp in the sauce and cook for an additional 1-2 minutes, just until heated through.
- Remove the skillet from heat and squeeze the juice of one lemon over the shrimp. Toss again to combine, and adjust seasoning with more salt and pepper if desired.
- Garnish with chopped fresh parsley before serving.
