Kathy Pullin's Turkey Meatballs
These Turkey Meatballs are smoky, cheesy, and packed with bold BBQ flavor, featuring juicy turkey and pork wrapped in a crispy spicy cracker crust. Finished with a tangy vinegar-based BBQ sauce, they’re the perfect crowd-pleasing bite for game day, backyard cookouts, or weeknight grilling.

Ingredients
- 1 lb ground turkey
- 1/4 to 1/2 lb ground pork
- 1 egg
- 4 oz diced pepper jack cheese
- 1/4 cup diced onion
- 1 teaspoon Sassy BBQ rub (or your favorite rub)
- 1/2 teaspoon salt
Directions
- Combine above ingredients and make balls 1/4 to 1/3 lb each and set aside.
- 4 oz Spice House crackers Original Spicy. Place crackers in a plastic bag and crush with a rolling pin.
- Roll turkey meatballs in crushed crackers.
- Bake 350° in oven or grill till internal temperature reaches 150° then top with a vinegar based bbq sauce. I used John Boy and Billy Original.
- Continue to bake till internal temperature of 165°
