  • 1 clove garlic
  • Olive oil
  • Fresh basil
  • Fresh thyme
  • Fresh parsley
  • Juice of 1 lemon
  • Parmesan cheese
  • Salt & Pepper

Directions

  1. Boil water according to pasta instructions.

  2. Meanwhile, put olive oil and salt & pepper on the Poblano peppers and roast them.

  3. Once charred, place them in a bowl and cover with plastic wrap. Allow them to steam.

  4. Once cooled, remove and scrap char from peppers, remove stem and seeds. Chop peppers into a medium dice, and set aside.

  5. Remove seeds from Roma tomato, chop in a small dice, and set aside. Then take red onion and small dice 1/2 cup and set aside.

  6. Take clove of garlic, smash and finely mince.

  7. Take the garlic, peppers, tomatoes and onions, and place them in large bowl. Once pasta is done, drain and pour over chopped vegetables.

  8. Stir to combine. Drizzle with olive oil and lemon juice, salt & pepper to taste. And chopped herbs and 1/2 cup grated parmesan cheese.

  9. TIP: When you are mincing your garlic, smash clove to remove skin. Sprinkle with salt, then mince.
