- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 medium carrots, grated
- 1 tbsp curry powder (medium or hot, to taste)
- 1 tsp paprika
- 1 can (15 oz) baked beans in tomato sauce
- 1 can (14 oz) diced tomatoes
- 1-2 green chilies, finely chopped (optional, for heat)
- Salt and pepper to taste
- Fresh parsley or cilantro, chopped (optional, for garnish)
Steps for RobMcBBQ's South African Chakalaka:
- Sauté Aromatics: Heat oil in a large pan over medium heat. Add onion and garlic, cooking until soft and golden, about 3-4 minutes.
- Add Veggies: Stir in bell peppers and carrots. Cook for 5 minutes until slightly softened.
- Spice It Up: Add curry powder, paprika, and chilies (if using). Stir for 1 minute to release the aromas.
- Combine: Pour in baked beans and diced tomatoes with their juices. Stir well, then simmer for 10-15 minutes, stirring occasionally, until thickened.
- Season & Serve: Taste and adjust with salt and pepper. Garnish with parsley or cilantro if desired. Serve hot as a side with pap, braai, or bread, or as a relish for any meal!
Extra Tips: Adjust spice levels to your liking—add more chilies for a fiery kick or keep it mild. For extra depth, toss in a handful of shredded cabbage or a splash of vinegar. Enjoy the vibrant, zesty taste of South Africa!
