Perfect Ribeye Steak on the Grill

Ingredients

  • 1 Ribeye steak, 1 thick and well-marbled
  • 1 tbsp Chupacabra Steak Seasoning
  • 2 cups Smokey Woods Lump Charcoal
  • 1 tsp coarse salt (optional for dry brine)
  • 1 tbsp butter (optional for finishing)

Directions

  1. Remove the ribeye steak from the refrigerator and let it come to room temperature, about 30 minutes before grilling. This helps it cook evenly.
  2. If using, sprinkle the coarse salt evenly on both sides of the steak. Let it sit for 30 minutes to dry brine, which enhances flavor and tenderness.
  3. Prepare your grill by filling a chimney starter with the smokey woods lump charcoal and lighting it. Allow the charcoal to burn until it is covered with white ash, about 15-20 minutes.
  4. Once the coals are ready, carefully pour them into one side of the grill to create a two-zone cooking area: one side for direct heat and the other for indirect heat.
  5. Place the ribeye steak on the direct heat side of the grill. Sear the steak for 3-4 minutes on one side until a nice crust forms and it releases easily from the grill grates.
  6. Flip the steak using tongs and sear the other side for another 3-4 minutes. Use a meat thermometer to check for doneness: 125°F (52°C) for medium-rare, 135°F (57°C) for medium.
  7. If the steak is not at your desired doneness after searing, move it to the cooler side of the grill, cover, and cook until it reaches the desired internal temperature, checking every couple of minutes.
  8. Once cooked to your liking, remove the steak from the grill and let it rest for 5-10 minutes. This allows the juices to redistribute for a more flavorful bite.
  9. Optional: While resting, add a pat of butter on top of the steak for extra richness. Serve and enjoy!
