Ingredients for Cast Iron Chicken Pie:

For Samantha’s Creamy Chicken Filling

  • 3 tbsp butter
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 1 cup peas
  • 2–3 cups cooked chicken, shredded or cubed
  • 3 tbsp flour
  • 1 ½ cups chicken stock
  • ½ cup cream
  • ½ cup milk
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp Dijon mustard 
  • ½ tsp black pepper
  • ½ tsp salt
  • Optional: ¼ cup chopped fresh parsley for brightness

For the Crust

  • 1 sheet puff pastry
  • 1 egg, beaten (egg wash)

Ingredients for Cast Iron Chicken Pie:

  1. Heat butter in a Lifespace cast iron pan. Sauté the onion, garlic, carrots, and celery for 7–10 minutes until soft and aromatic.
  2. Sprinkle in the flour and cook for 1–2 minutes to form a roux.
  3. Slowly whisk in the chicken stock, cream, and milk until a silky, thick sauce forms.
  4. Stir in thyme, Dijon mustard, salt, and pepper.
  5. Add the shredded chicken and peas and let the mixture simmer until well combined and creamy.
  6. Remove the pan from the heat, cover it with a sheet of puff pastry, trim the edges, cut a small vent on top, and brush with egg wash.
  7. Bake at 200°C / 390°F for 25–35 minutes, until the pastry is puffed, glossy, deep golden, and the filling is bubbling at the edges.

Serving Recommendation:
