Ingredients for Cast Iron Chicken Pie:
For Samantha’s Creamy Chicken Filling
- 3 tbsp butter
- 1 onion, finely diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery sticks, chopped
- 1 cup peas
- 2–3 cups cooked chicken, shredded or cubed
- 3 tbsp flour
- 1 ½ cups chicken stock
- ½ cup cream
- ½ cup milk
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 tsp Dijon mustard
- ½ tsp black pepper
- ½ tsp salt
- Optional: ¼ cup chopped fresh parsley for brightness
For the Crust
- 1 sheet puff pastry
- 1 egg, beaten (egg wash)
Ingredients for Cast Iron Chicken Pie:
- Heat butter in a Lifespace cast iron pan. Sauté the onion, garlic, carrots, and celery for 7–10 minutes until soft and aromatic.
- Sprinkle in the flour and cook for 1–2 minutes to form a roux.
- Slowly whisk in the chicken stock, cream, and milk until a silky, thick sauce forms.
- Stir in thyme, Dijon mustard, salt, and pepper.
- Add the shredded chicken and peas and let the mixture simmer until well combined and creamy.
- Remove the pan from the heat, cover it with a sheet of puff pastry, trim the edges, cut a small vent on top, and brush with egg wash.
- Bake at 200°C / 390°F for 25–35 minutes, until the pastry is puffed, glossy, deep golden, and the filling is bubbling at the edges.
Serving Recommendation:
